Okay, so it’s not spicy.  But it is heavenly.  These meatballs can be used in various recipes… meatball subs, meatball appetizers, spaghetti and meatballs, I’ll stop before I start to sound like the Bubba Gump of  meatballs.  Email me if you want more ideas!

Ingredients

  • 3 pounds ground beef
  • 2 cups Parmesan cheese, grated
  • 5 eggs
  • 2 teaspoons salt
  • ⅛ teaspoon pepper
  • 4 cloves garlic
  • 6 slices bread (soaked in milk, then squeezed as dry as you can*)

*Completely gross to look at and feel, but get past it.  I promise this is what makes these meatballs better than the rest.

Mix meat, cheese, eggs, salt, pepper, garlic & bread. Form meatballs (larger than a marble, but smaller than a golf ball).
I used a handy scoop from the Stock Pot to form these bad boys.

Place on baking sheet and bake at 350 degrees for approximately 8-10 minutes.  Remove. Rinse.
(This pic is pre-rinsing).
I soaked mine in marinara and made meatball subs.  What will you do?
