Meatless Monday: Quesadillas

Quesadillas are an easy meal to assemble using ingredients you already have on hand. They are also delicious with or without meat, so a perfect option for your Meatless Monday. And don’t forget the fact that they’re FAST. They only take about 5-10 minutes tops to make, so make them for lunch, dinner, snack, or your Taco Bell inspired 4th meal.

Here are some recipes for meatless quesadillas I found to share with you today. I haven’t tried any, but if you do, please let me know how they turned out! Or get creative and create your own masterpiece.

Farmer’s Market Vegetarian Quesadillas
Greek Style Quesadilla
Grilled Vegetable Quesadilla
No Queso Quesadillas (vegan)
Pesto Zucchini Quesadillas
Roasted Squash, Red Pepper, and Jack Cheese Quesadillas
Spinach & Mushroom Quesadillas

Black Bean & Goat Cheese Quesadillas


2 corn or flour tortillas, your preference
1/3 cup cooked black beans
1 ounce crumbled goat cheese (1/4 cup)
1/4 roasted red bell pepper, cut in strips
Salsa for serving (optional)

Start by smearing your tortilla with the black beans, making sure to smush the beans.

Put  the tortilla in a small pan or grill pan over medium-high heat and place the pepper strips on top of the beans.


Then top with the goat cheese. Please ignore the fact that I used goat brie, my store was out crumbled goat cheese… moral of the story, any cheese will do.




 

 

 

Heat the tortilla until the goat cheese begins to melt, and then place the remaining tortilla on top of the cheese, slightly pressing down. Flip over and brown the other tortilla (about 30 seconds to one minute). Just make sure the cheese is nice and melty.




Remove to a plate, cut and serve with salsa, sour cream, guacamole, etc.
