Leftover Breakfast Burritos

Ever find yourself at the end of the week with a fridge full of random? It happens to me more often than I’d like to admit. The only good thing that comes from it is a chance to get creative and make a tasty meal. This week we had a taco night and had some leftover ground beef, black beans, onions and red peppers. These ingredients just happen to be perfect for breakfast burritos.

I started with half an onion and one full red bell pepper, chopped and sautéed in about 2 Tablespoons of olive oil. Add some red pepper flakes if you’re feeling spicy (about ½ teaspoon).


 

Let the veggies cook until tender (about 5 minutes).

 

 

 

And add your beans and cooked meat (hamburger, sausage, etc.) about 1 cup of each (or however much you have leftover).







While this heats through, whisk 6-8 eggs in a bowl and salt and pepper them.



When the meat and veggie mixture is nice and hot, add whisked eggs and stir frequently while the eggs set.



When the eggs are no longer runny, you’re ready to build your burrito adding your favorite toppings.

  2. Add the onion and red pepper and red pepper flakes.
  3. Let the veggies cook until tender (about 5 minutes).
  4. Add the meat and beans.
