1 list / 2 meatless meals [square]

When I go to the grocery store or preferably, the farmers’ market, I tend to overbuy vegetables. Nothing wrong with that, especially when it leads to two great meatless meals in one week. I know the list looks rather long, but vegetables are pretty cheap and you can always substitute your favorites for what I used in the recipes below.

What you’ll need: ginger, honey, soy sauce, 2 eggs, red pepper flakes, cayenne pepper, 2 red bell peppers, 2-3 heads of broccolini, baby carrots, 1 red onion, garlic, 5-6 green onions, grape tomatoes, ricotta cheese, rice (brown or white) and penne pasta
Garnishments (Optional): cashews or peanuts, Parmesan cheese

The first meatless meal you can create is a sweet and spicy stir fried rice.

Sweet & Spicy Stir Fried Rice


1 red bell pepper, diced
½ red onion, diced
2 heads broccolini, chopped
handful of baby carrots, diced
2 cloves garlic
1 teaspoon ginger, minced
2 large eggs
2 cups cooked riced, chilled

Start by chopping your veggies. Here I will share my favorite way to chop bell peppers. I know there are several “best” ways to do it, but this is the easiest I’ve found.

First, you chop the top off of the pepper.


Then reach in and pull out the seeds and lining (what is that stuff called?).


This is what you’ll have.


Next, take the top and chop all the sides off, no pepper wasted.


Now take the whole pepper and cut it down the middle.

Now flip over and cut slices.


And finally, chop those slices into a smaller dice.


There you have it. The best way I have found to chop a bell pepper. See what you think.

Now chop the rest of your veggies.

Grate the ginger over the chopped veggies.

Heat 2 Tablespoons of oil in a large pan or wok over high heat.

Add the minced garlic and crushed red pepper flakes (only a pinch for now).


Throw in all of your veggies and stir.


While the veggies heat up, make your sweet / spicy sauce. Start with honey, soy sauce, crushed red pepper and cayenne pepper (optional).

 

 

 

 

 

 

 

 

 

Mix 3-4 Tablespoons of honey and 2 Tablespoons soy sauce with about ⅛ teaspoon of crushed red pepper, add a dash of cayenne pepper for additional heat if you prefer.


Add to the vegetables and stir to coat.


Let the liquid reduce in half and then push all of the veggies to the sides of the pan. Add the eggs to the center and scramble.


Once the eggs are cooked, stir to combine with the vegetables.

Make another hole in the center of the pan and add your chilled rice.

Let the rice cook for a few minutes and stir to combine.

Once the rice is nice and hot, you’re ready to serve your sweet & spicy stir fried rice.


Garnish with chopped green onions and peanuts or cashews and sriracha.

Instructions

  1. Place all of your chopped veggies in a large bowl.
  2. Grate the ginger over the chopped veggies.
  3. Heat 2 Tablespoons of oil in a large pan or wok over high heat.
  4. Add the minced garlic and crushed red pepper flakes (only a pinch for now).
  5. Throw in all of your veggies and stir.
  6. While the veggies heat up, make your sweet / spicy sauce (see below)
  7. Add the sweet/spicy sauce to the vegetables and stir to coat.

    Looks delicious except for the killer peanuts.

    I think that core part of the pepper is called pith, just like the white fibrous stuff in oranges.
