Meatless Monday: Swiss Chard with Grilled Polenta [square]

Get to your local farmer’s market and pick up some swiss chard right now. It is a must have for your future meatless meals. It’s so hearty I doubt you will miss the meat, especially when you pair it with grilled polenta as a base.

Ingredients

  • 1 tube polenta
  • 2 tablespoons butter
  • Approximately 1/4 cup extra-virgin olive oil, plus 2 tablespoons
  • 1 tablespoon minced garlic
  • 1/2 small red onion, diced
  • 1 bunch Swiss chard
  • 1/2 cup dry white wine
  • 1 tablespoon fresh lemon juice, or to taste
  • 2 tablespoons freshly grated Parmesan cheese
  • salt & pepper to taste

Directions

First you need to cut the stems and center ribs from the swiss chard. I did this by folding the chard at the stem and laying it on the chopping board to make it easy.

Separate the stems and center ribs from the leaves.

Chop the stems and center ribs together, and coarsely chop the leaves separately.

Now let’s dice the onions.

Now that your chard and onion is prepped, get started on the polenta by removing it from the casing and cutting into 1/2-inch slices and pat dry with paper towels.

Brush both sides of the polenta slices with the olive oil. Get your grill (or grill pan) nice and hot. Lay the polenta slices on the grill and let them grill for about 8-10 minutes on each side.

They should be golden, crunchy and have nice grill marks.

Remove the polenta from the grill and set aside on a baking rack to cool.

While the polenta is grilling, melt the butter and 2 tablespoons of olive oil in a large skillet over medium-high heat.

Once melted, stir in the garlic and onion and saute for 30 seconds or so. Add the chopped chard stems and white wine. I mean, just look at how beautiful those stems are – and they taste even better!

Simmer the stems until they begin to soften, about 5-7 minutes.

If you’re not sure if the stems are softened enough, taste a few until they are the right texture for you. When they are, add in the chard leaves.

Cook and stir until the leaves are wilted. Lastly, stir in the lemon juice.

And sprinkle with parmesan cheese, salt & pepper.

To serve, lay out a few polenta slices.

Top with the sautéed swiss chard and sprinkle with more grated parmesan.

This combo was fantastic and it introduced me to a new vegetable that I love, as well as a new way to prepare polenta. Hope you incorporate both into your meatless meals soon.

    I feel like a dummy but I wasn't sure what polenta was. I've heard of it but I'm not sure I've ever had it!

    It's the same as grits and cornmeal really… just depends on how thick the corn is ground I think.
