Cheesy Corny Muffins

Today I have the perfect thing to accompany your winter time soups/stews/chilis. These cheesy, corny muffins are hearty enough to stand up to the soup and they just add a little something to your dinner table. Did I mention they are really easy?

What you’ll need:

  • Jiffy corn muffin mix
  • 1 egg
  • 1/3 cup milk
  • 1/2 cup frozen corn
  • 1/2 cup cheddar cheese, shredded

Preheat your oven to 400.

Start by following the directions on the Jiffy box: in a large bowl, combine muffin mix, milk, and egg.

Stir to combine everything. Seriously, easiest recipe ever.

If you’r using blocks of cheese, now is the time to start shredding. If you’re not using blocks of cheese, start right now. It’s so much better and way more cost effective than the pre-shredded stuff.

Now add your corn and cheese to the muffin mixture.

Stir again. You still with me?

Now, fill muffin cups (spray liners with cooking spray) until about half-full (not half-empty).

Bake 15-20 minutes until they are cooked through.

Serve nice and warm with your favorite soup.

  1. The only thing wrong with this recipe is that makes a normal number of muffins. The taste, however, is unbelievably and overwhelmingly good. As such I want an unbelievably and overwhelmingly massive number of muffins.
