I really like doing these menu recaps. It holds me accountable for our meals throughout the week and forces me to organize a shopping list at the beginning of the week rather than running to the store after work or on my lunch break twice a week. Run on sentence anyone?
I’m sure menu planning isn’t something new to you guys, but it’s a first for me. So hopefully I can keep it up!
Monday: Garlicky Spinach Lasagna
I have never made lasagna so I decided to give this one a try. This recipe is very forgiving. I pretty much did it all wrong and it still turned out tasting fantastic. I will say it’s a bit time consuming, so maybe have everything prepared ahead of time. And I would also suggest using frozen spinach rather than wilting your own. It took a while and what’s the point when you can just buy a box of frozen, defrost, squeeze out the water and go!

Wednesday: Chipotle Roasted Chicken and Vegetable Pizza
This “pizza” was really tasty with a lot of different flavors. I say “pizza” with quotes because it isn’t your typical pizza. No hot, melty cheese, or your regular toppings. I would say this is more of a flat bread than a pizza, regardless, it’s delicious.
