The only thing I cooked this week was all of this for my Girls’ Night Christmas Potluck on Wednesday.
Appetizer: Goat cheese, pancetta, and chive stuffed mushrooms
I forgot to buy the pancetta, so I used thinly sliced pepperoni. These were a HUGE hit and I will definitely be making them again.
Main Dish: Garlic Crusted Pork Loin
This pork loin was very tender and delicious. I would recommend it for your holiday meal if you’re tired of ham and turkey.
Side Dish: Butternut Squash Risotto
This risotto was very rich and flavorful. I made it with vegetable stock so that it was completely vegetarian friendly, it was also a huge hit!
Thanks to everyone who brought appetizers, sides and desserts. I am still full from our feast!
