Menu Recap: December / Week 1

Monday: Rachael Ray’s Arroz con Pavo

I love re-purposing leftovers, and this turkey with rice sounded perfect for all of the turkey we had leftover from the recent holiday. Unfortunately, my turkey had already gone bad, so sad. Thought I’d share the recipe, though, in case any of you were smarter than me and put some turkey in the freezer for a future meal.

Tuesday: I had a meeting, so the original plan for Tuesday was for Sam to have leftover Arroz con Pavo. Due to the unforeseen circumstances discussed above, Sam was forced to eat leftover pizza from Sunday night. I don’t think he cared.

Wednesday: Slow Cooker French Dip Sandwiches

Slow cookers are a cook’s best friend, I saw this on pinterest and just knew it’d be perfect for a cold winter evening. I’ll post the step-by-step details tomorrow so you can make these sandwiches as soon as possible!

Thursday: Leftover clean-up! A free-for-all on all food left in the fridge. Always fun and easy!

Friday: DATE NIGHT at Fleming’s. (I love date nights.) I had the petite filet, oscar style – my absolute fave! Sam tried the new porcini rubbed filet with gorgonzola cream sauce. Both were AMAZING.
