This week(end) started off with some pancakes on the griddle, sounds nice right? Well…………………. about half-way through cooking, I noticed a lot of smoke. A LOT. Turns out, that under the griddle a grease fire had started. EEK. Luckily we were able to contain it and smother it. A little excitement for Sunday morning! The pancakes got a little burnt, but still tasted pretty delicious. Here’s a pre-fire pic:
Also, over the weekend, I made this Chicken Tamale Casserole using the leftover Slow-Cooker Cilantro Lime Chicken and it was a huge hit. I typically don’t care for enchilada sauce, but this homemade version has won me over. This recipe is perfect for making ahead and freezing/refrigerating and it will definitely be in the rotation going forward.
To celebrate fat Tuesday, we had dinner with our friends CJ and Chauntay. They prepared a feast fit for a day so aptly named FAT Tuesday and have been so kind to share the recipes… drink: sidecar | appetizer: spicy cajun crab dip | main dish: jambalaya | dessert: mardi gras cupcakes
For Ash Wednesday, my meatless lunch was a tasty little vegetarian-quesadilla-turned-taco that I whipped up using what we had in the fridge: pepper jack cheese, yellow bell pepper, jalapenos, avocado and cilantro. I was pleasantly surprised with how it turned out. Here’s the “recipe” if you can call it that: saute sliced bell peppers in a little bit of olive oil and red pepper flakes until heated through (2 minutes tops), set aside, add a tortilla to the same pan and top with shredded cheese and heated peppers. Cook over medium heat until cheese is melted. Top with jalapenos and/or cilantro. Easy. Tasty. Done. [371 calories]
On Thursday, it was my turn to host Bunco Girls’ Night and no, we have never actually played bunco in the year that I’ve been in attendance. To continue our Mardi Gras celebration, I made spicy cajun shrimp and cheese grits. I’ll share the recipes ASAP, swear.
And finally, Friday was dinner club at our friends Jordan & Chelsey’s, so that was it for cooking this week.
