The superbowl food coma, combined with a mid-week ski trip meant not a lot of cooking for me this week. We had such a successful, very small, get together for the superbowl. Everything turned out great and I ate my weight in all the delicious snacks.
Of course P-Dub made an appearance…with the BBQ Whiskey Sliders… huge hit.
And you can’t do football without dips. Here we have the white queso (sorry, no recipe at this time), jalapeno popper dip, and red onion dip.
Chelsey brought the best little pigs in a blanket I’ve ever seen. She used a variety of dogs and cheeses, which made them very adult-like. Plus, just look at all of those dipping sauces!
And Jess brought these “why didn’t I think of that” 7-layer dip cups.
Last but not least, we had these ridiculously cute football cupcakes. The football was a cake ball… so good, so creative, from who else? Linda’s Cupcakery!
A successful little superbowl party indeed!
Still not a whole lot of cooking this week due to Valentine’s falling mid-week. Typically, we stay in and cook for V-day but the past couple year’s we’ve taken Sam’s mom on a date with us. Last year Coney Islander – this year Outback to visit his brother Ben.
Sunday: Ranch Burgers so easy and so delicious – try these next time you make burgers and you’ll never go back. The grated onion and ranch combination makes these burgers so juicy & tasty. And don’t forget the spicy mayo (aka – sriracha & mayo).
Monday: Slow-Cooker Cilantro Lime Chicken tacos with black beans
This chicken is very flavorful and is great for tacos, enchiladas, nachos, etc. I think I will use what we have leftover in this Chicken Tamale Casserole I’ve been wanting to try.
Like I said, not a lot of cooking this week. We took Sam’s mom out to dinner on Tuesday for Valentine’s day, had leftovers on Wednesday, a nice little date night on Thursday, and tonight I finally get to try Juniper for Shonda’s (my forever young boss) birthday.
