Sorry guys – I promise I have some great recipes coming up. But for now, here is what I cooked the past 4 weeks. Not a lot, but some good things I’d like to share.

Zesty Slow Cooker BBQ Chicken from AllRecipes.com
I made this for a friend who just had a baby. It’s very easy, 5 ingredients total and the slow cooker does all the work. I served it with coleslaw and dinner rolls so that they could make little BBQ sliders.
Skinny Taste’s Crock Pot Buffalo Chicken with, WITH skinny blue cheese dressing
Hot off the heels of the successful slow cooker BBQ chicken I decided to try a slow cooker BUFFALO chicken. I know, way to branch out, but let me tell you about this buffalo chicken. It IS the only buffalo chicken you should eat from now until forever. It is low-cal, low-fat, and tastes JUST as good as any wing I’ve had. I also served this slider style, along with the lettuce wrap option. And then I made it into a salad with the leftovers. All were delicious.

Mmmmmmm – I’ve made it twice since this post. Great for lunch OR dinner. Also great over spinach.
Lamb Tacos w/ Spicy Sriracha
Nevermind the fact that my “taco” fell apart. Make these with pita or tortillas and you’ll be fine.
I feel like I’ll be better at the menu updates when I’m cooking more regularly. I’m getting married in 10 days, so please forgive me because the next month will probably be a little piecemeal as well.
