Lime Chicken Melt

I bought double the ingredients for the Chicken & Avocado Salad with Lime & Cilantro I made last week. So later in the week, I re-invented the recipe into a chicken melt. It was the best sandwich I’ve had in quite a while. I’m typically not a fan of hot sandwiches (call me crazy) but for some reason the thought of lime, cilantro, and chicken with ooey gooey cheese melted over it sounded delicious and I was right! This is a quick and easy meal that can be made ahead and heated just in time for dinner.

Here’s what youl’ll need:

  • 3 cups shredded chicken (~1 rotisserie chicken)
  • 3-4 green onions, diced
  • 1/4 cup cilantro, chopped
  • 1 jalapeno, seeded & diced
  • 1 lime
  • 4 onion rolls (or bread of your choice)
  • 4 slices of provolone cheese (or your cheese of choice)
  • 4 slices bacon
  • 2 Tablespoons butter

Preheat the broiler to 375° while you’re prepping all of the ingredients. In a large skillet, over medium heat cook the bacon until nice and crispy.

While the bacon is cooking, shred the chicken into chunks and place in a large bowl.

Next, dice the green onion and jalapeno.

Add these to the bowl of chicken, along with the juice from one lime and a handful of chopped cilantro.

Stir to combine all of the ingredients.

By this time, your bacon should be nice and crispy, remove the bacon and set it aside. Then drain the bacon grease leaving maybe a teaspoon. Add the chicken mixture to the heated pan and stir for a couple minutes to make sure it’s all nice and warm.

In the meantime, melt the butter in a small dish and brush over the slices of bread.

Then simply assemble your sandwiches. Add a good amount of the chicken mixture to the bread and top with the cheese of your choice.

Place in the oven under the broiler for 3-5 minutes until the cheese is melted.

And last but not least, top with bacon slices and enjoy!
