So here’s what I made this week so far. I will definitely be cooking Saturday after my first trip to the farmers’ market this year, but I have no clue what it will be just yet. I’ll share if it’s good! Seriously, this week’s meals were so delicious and pretty light/healthy-ish.
Monday: Chicken & Avocado Salad with Lime & Cilantro
Saw this on Sunday, made it on Monday and I am so glad I did. The only modification I made was I added a jalapeno for crunch and spice. This salad is perfect – easily adaptable to your tastes (a friend added mushrooms & asparagus) and you can make it in about 4 minutes. I like that it’s healthier than most of the creamy chicken salads because you are using avocados rather than tons of mayo. This is definitely a keeper recipe.
Tuesday: Thunder game and grilled chicken with roasted vegetables at Nick & Jess’s
Wednesday: leftovers from Monday’s chicken salad and I also got to enjoy the LMFAO concert thanks to my BFF Jess. It was an all night dance party and we had a blast!
Thursday: Lime Chicken Melts
I made this one up using practically the same ingredients from Monday’s meal. I’ll share the recipe VERY soon. Trust me, you’ll want to make it.
Friday: Mom date night at Juniper
We bought our moms Jersey Boys tickets for Christmas and it was finally time to see the show. Sam and I saw it in NYC during his last spring break of dental school and absolutely loved it. I knew our moms would love it too so as soon as we saw it was making a stop in Tulsa, we snatched up some front row tickets! Dinner and a show… a perfect combination. Juniper is very close to the Tulsa Performing Arts Center and it’s ridiculously good so it was the obvious choice for the pre-show meal. Plus, Sam has never been and I’ve only been once so we needed to go any way.
