I saw these breakfast bars on pinterest and knew I had to make them immediately. They combine your basic breakfast foods into one delicious and easy casserole… biscuits? check. eggs? check. bacon & cheese? check. check.

I chose a birthday breakfast at work to test the recipe and it was very popular. It might be the easiest breakfast casserole in existence, which makes it perfect for those weekends you don’t feel like slaving over the stove.

Here’s all you need:

(makes 2 8×8 pans or 1 9×13 pan)

  • 1 can of biscuits or crescent rolls
  • 1 pound breakfast sausage or bacon, browned
  • 10 eggs
  • cheddar cheese
All you do is press the biscuits into the bottom and sides of either two 8×8 pans or one 9×13 pan. Whip the eggs together (5 for each 8×8 pan). Pour them over the biscuits, top with browned sausage or bacon or get real crazy and have both. Add shredded cheese and bake at 350°F for 15-20 minutes until the eggs are set.

Cut into bars and serve and enjoy.
