Philly Firecrackers

I couldn’t resist these roll-ups on the 4th of July because of their name, Philly Firecrackers. I mean, how perfect is that for the 4th celebration? These are perfect year-round though as they are quick, easy and pack a punch with the tangy horseradish sauce.

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 green onion, chopped
  • 1/4 cup cilantro, chopped
  • 2 tablespoons prepared horseradish
  • 8 (12-inch) flour tortillas
  • 1 pound roast beef, sliced
  • 1 package of sliced or shredded sharp Cheddar cheese
  1. In a medium bowl, stir together first 5 ingredients until blended. Spread evenly on one side of each tortilla; top with 2-3 beef slices and, if desired, 2 cheese slices (or a couple tablespoons of shredded cheese).
  2. Roll up tortillas tightly in plastic wrap and chill for 8 hours.
