chicken burgers with garlic-rosemary mayo

We received Giada’s cookbook as a wedding gift and I finally got to use it last week! I love her show and I knew I’d love her cookbook just as much. The first recipe I tried from the cookbook was Chicken Burgers with Garlic-Rosemary Mayo and it is definitely a repeat recipe.

Lucky for you, you don’t have to actually buy the cookbook since the recipe has been so generously shared on the Food Network website.

Here’s what you’ll need:

  • 1 cup mayonnaise
  • 1/4 cup chopped fresh rosemary leaves
  • 1 clove garlic, minced
  • 1 pound ground chicken
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 sandwich rolls or burger buns
  • 1/4 cup olive oil
  • 1 cup arugula, divided

This garlic-rosemary mayo is key, make it first, even a day or two or three in advance. Make extra because it’s so good you’ll want it on ALL of your sandwiches after this.

Now, I’m a farmer’s daughter ya’ll (had to), and this is the first chicken burger I’ve ever made… and although it might sound sacrilegious, I kinda loved it. Working with chicken is a little messier than beef, but the result was surprisingly good and it is a nice change-up to your regular burger routine. Am I the only one with a regular burger routine?

When you’re ready to cook, preheat a gas or charcoal grill or place a grill pan over medium-high heat.

You can’t deny how good that looks! Meanwhile, back at the ranch… I mean, while the burgers are cooking, prepare your buns. Here’s a little tip, I was able to buy individual ciabatta rolls at Whole Foods for 79¢ each – they are located by the hot soup bar and it’s a better deal than buying a bag of rolls and only using half before they go bad.

When the burgers are resting, grill the rolls/buns for 1 to 2 minutes until slightly golden.

Now it’s time to assemble the burgers…

You may notice I forgot the arugula… oh well. These burgers were very delicious for how easy they are to make. I recommend you give them a try very soon and see what you think.
