Corn Chip-Crusted Halibut

Continuing my cooking from cookbooks trend, I made recipes from this fantastic cookbook last week. Another perfect wedding gift we received and I highly recommend it for future brides (and/or grooms). Every recipe that my friends and I have tried have been a huge success. For my first recipe out of this book, I chose the corn chip-crusted halibut. We had some leftover fritos and halibut is always a hit around here. And just the mention of the word cilantro and I’m in heaven.

This recipe is simple but yields great flavor and a restaurant-quality meal.  Here’s what you’ll need:

  • 2 halibut fillets (8 oz each)
  • kosher salt
  • 1/2 teaspoon ground cumin
  • 2 Tablespoons, unsalted butter, melted
  • 1Tablespoon fresh lime juice
  • 1 cup corn chips (fritos)
  • 3/4 cup bottled salsa
  • 3 Tablespoons sour cream
  • 2 Tablespoons fresh cilantro leaves

Start by preheating the oven to 400° and lining a baking sheet with aluminum foil. I bought fresh halibut, however it was $18 for 1 pounds so in the future I’ll probably just stick with the frozen variety. Place the fillets on the baking sheet and season.

Put the fritos (or doritos) in a baggie and crush them with the palm of your hand or with a rolling pin.

Cover the fish loosely with aluminum foil to prevent excess browning, then bake for 10 minutes, remove the foil and bake another 10 minutes until the fish is opaque in the center.

In the last 5 minutes, whisk together the salsa and sour cream in a small saucepan over low heat. Heat until just warmed through (about 2-3 minutes). Remove the fish from the oven and place the fillets on individual plates, topped with the creamy salsa and cilantro.

I served our fish with a summery salad made of tomatoes, cilantro, red onion, avocado and lime juice (and of course salt & pepper).

Ingredients

  • 2 halibut fillets (8 oz each)

  • 3/4 cup bottled salsa
  • 3 Tablespoons sour cream
  • 2 Tablespoons fresh cilantro leaves

Instructions

  1. Preheat oven to 400°.
  2. Line a baking sheet with aluminum foil and place the halibut on the baking sheet.
  3. Season both sides with salt and cumin.
  4. Combine the butter and lime juice in a small bowl and drizzle over the fillets.
  5. Top each fillet with a thick layer of chip crumbs. Cover loosely with aluminum foil to prevent excess browning.
  6. Bake until the fish is opaque in the center, about 20 minutes, removing the foil after 10 minutes.
  7. Whisk together the salsa and sour cream in a small saucepan over low heat. Heat until just warmed through, about 2-3 minutes.
  8. Place halibut fillets on individual plates and top with creamy salsa.
