pinterest menu recap [week 33]

Last week was FULL of pinterest recipes (follow me on pinterest here). Not sure why… but that’s just how it worked out! Maybe I was in withdrawal after cooking from my cookbooks for the past few weeks. Or maybe pinterest is a little easier for me to peruse during the day to pick out recipes.

Pancake Bites

As I mentioned, Sam’s birthday was Monday of last week so I wanted to take breakfast to his office for him. These were so easy and such a hit, I made them for my office on Thursday. All the moms mentioned that this would be SO easy for a quick breakfast before school if you made them ahead of time, nuke a couple and go.

There really isn’t a “recipe” but you just make your favorite pancake batter (I did whole wheat Shawnee Mills) and pour it into a mini-muffin pan, then top with whatever you want, or leave plain.

The possibilities are endless… I made a variety of maple sausage, bacon, and blueberries. I think the sausage was my favorite though, dipped in syrup of course. You can cook the sausage or bacon ahead of time too so it is quicker assembly when you’re ready.

Snickers Brownies

I wouldn’t exactly call these a pinterest fail because they tasted really good. The fail portion was in my execution of slicing the brownies… as you can see, they’re a little (okay a lot) gooey and basically I just made a big, sticky mess. That being said, they were still a success at the birthday luncheon at Sam’s office.

Make sure you give yourself plenty of time to make these as each layer has to “set”… maybe that was my problem? Who knows, definitely worth trying!

Healthy Chicken Taco Salad

I kept seeing this recipe on pinterest with the comment “Chicken Taco salad that’s HEALTHY! There’s black beans, corn, green peppers, tomatoes, cilantro, green onions, chicken, avocado & tortilla chips.  All tossed together with a taco ranch dressing” and I never pinned it because I couldn’t figure out how it was considered healthy but was tossed in ranch dressing. I finally clicked thru to the actual recipe and realized it was a homemade ranch made with greek yogurt. This salad is not only healthy and customizable to your tastes, but the taco ranch dressing takes it over the top. Pinterest WIN.

The only thing I changed was I used spinach instead of iceberg lettuce to make it even more healthy… Try it with romaine if you still like a crunch to your salad.

    Hi! Do you have the actual recipe for the “healthy chicken taco salad”? I have been searching everywhere for it and it keeps coming up with the Error 404.
