spicy chicken rice bowls

So this isn’t technically a recipe, just simply an idea. An idea inspired by the naked burrito bowls at Qdoba/Chipotle, complete with a healthier, brown rice version of the cilantro-lime rice. This is kind of like taco night, only stepped up a notch or two. Pick your favorite ingredients, set them up in a row and let everyone build their perfect spicy rice bowl.

here’s what I used:

  • cilantro lime brown rice
  • 2 chicken breasts
  • spices: cayenne pepper, cumin, garlic powder, chili powder
  • 1 cup frozen corn
  • 1 can black beans
  • queso fresco
  • cilantro
  • tomatoes
  • avocados
  • jalapeños

Here’s how I made mine…

For the spicy chicken: Sprinkle two chicken breasts with cayenne pepper (optional if you don’t like spice), cumin, garlic powder and chili powder. Bake at 350° for 20-30 minutes depending on the size of your breasts (chicken, not yours).

For the black bean/corn combo: I combined the beans, corn, chili powder, cayenne and some cilantro in a small saucepan. Stirred over low heat until everything is warm and ready for the rice bowl.

Build your bowl and enjoy!

Can’t go wrong and the leftovers were just as tasty.
