Four-Cheese Pizza

The cheese combination is very unique and scrumptious. All you need to do is prepare your favorite pizza dough, which can be homemade or store bought. I know you can buy the fresh pizza dough from Whole Foods or maybe even your local pizza place (Tulsa’s Andolini’s sells theirs). Then add the cheese & bake, doesn’t get much easier.

  • pizza dough (12 oz)
  • 2/3 cup shredded fontina cheese
  • 2/3 cup grated, high-quality mozzarella cheese *
  • 1/4 cup grated Parmensan cheese (preferably parmigiano-reggiano)
  • 1/4 cup crumbled gorgonzola cheese
  • 1/2 teaspoon fresh chopped rosemary or 1/4 teaspoon dried rosemary (optional)
  • fresh basil leaves (optional)
Preheat the oven to 500°. If you’re using a pizza pan, spray it with cooking spray. Or sprinkle cornmeal over a baking sheet. Or use a pizza stone. Whatever floats your boat.
Combine all of the cheeses above in a medium bowl. Divide the pizza dough in half to create to individual pizzas. Stretch it into 2 8-10 inch ovals and place on the pizza cooking apparatus of your choice. Top each pizza with half of the cheese mixture leaving a one-inch border.
Bake for 12-15 minutes until the crust is golden and the cheese is nice and melted. Top with fresh basil or rosemary and brush olive oil on the crust just before serving.

  6. Bake for 12-15 minutes until the crust is golden and the cheese is nice and melted.
  7. Top with fresh basil or rosemary and brush olive oil on the crust just before serving.
