So, I’m pretty behind on my menu recaps… but I’m going to attempt to catch up on the past two weeks THIS week! And yes, I didn’t cook anything until Thursday during week 34 (aka 2 full weeks ago).

Thursday: cookbook club

Our second cookbook club gathering took place on August 23. If you aren’t sure what cookbook club is… it’s this great idea I stole from my wedding caterer. A group of us got together and chose the new Pioneer Woman’s cookbook, Food from My Frontier, as our book for the year. We meet every two months and cook something from the cookbook. By the end of the year, we will have tried the majority of the recipes. During our “meetings” we share any notes or tips we encountered while making the recipe. This time around we had curried pasta salad, tangy tomato brisket, spicy caesar salad, fancy mac & cheese and apple dumplings.  I didn’t get ANY pics of the food… total fail for me. But in my defense, I was too busy eating.

I lied… Here is a pic of the cornbread I used to make the cornbread croutons that go ON the salad. Hey, at least it’s a pic!

For the recipes that she doesn’t have on her blog, I highly recommend purchasing this cookbook. It’s about $20 on Amazon and totally worth it!

Friday: turkey tacos with homemade tortillas

On Friday, I wanted to make something easy… so I went with my go-to, taco night. I didn’t go too easy on myself though, I decided to make homemade tortillas. This decision didn’t come lightly… Megan had been bragging about making homemade tortillas for weeks. I finally decided I needed to give it a whirl. She was right, super easy and SO much better than store bought. There’s only like 1 real ingredient, so there is no reason not to make your own tortillas at home from time to time. Seriously, SO much better than the store bought kind.

All it is is: flour, salt, water and olive oil. Did I just blow your mind? I made some with white flour and some 1/2 white and 1/2 wheat to be healthier. Both were amazing. See the entire recipe here. And make some tortillas right meow.

And while we’re on the subject of homemade… Promise me that you will never buy taco seasoning again. Promise? Pinky swear? You know why? Look in your pantry…that’s why. You have everything you need to make your own homemade taco seasoning without unnecessary preservatives. Here’s the recipe I used and my turkey tacos were the bomb dot com (no one says that anymore? noted).

Saturday: birthday party at oui3

Saturday we celebrated Whitney’s birthday at oui3 (where Garlic Rose used to be) and it was delish. Unfortunately, I have no pics of the food or the incredible basil cocktails we had. I did get a pic of the amazing macarons from Antoinette Baking Company (same place who made the ones at my wedding) and of some of the party participants… here you go!
