Since I wasn’t really great at keeping up with my weekly menu recaps last year, I decided to try something different this year: a monthly recap. You can click most of the pics below to take you to the recipe. And, here is what I made in January… enjoy.
Pioneer Woman cinnamon rolls | Technically I made these in 2012, BUT we had them for breakfast in 2013, so I’m counting them in my January menu. I didn’t have enough powdered sugar to make the coffee maple glaze, so I improvised and topped half of the rolls with this:
- 1 1/2 cups butter
- 1 1/2 cups brown sugar
- 3 Tablespoons vanilla
- 1/2 teaspoon salt
- 1 cup chopped nuts
- Melt butter, add brown sugar, salt, and vanilla and bring to a boil. Take off the stove and add enough powdered sugar to bring it to the consistency that you wish. Beat with electric mixer. Pour over warm rolls.
Pioneer Woman sour cream enchiladas | Not the most photogenic meal but fantastic nonetheless. I was super ambitious and made these enchiladas with homemade tortillas. Very time consuming, but oh so worth the extra effort.
homemade tortillas | I promise, you will never go back to store bought. Just combine 3 ingredients (masa or flour, salt, and water), press the tortillas and cook on the stove top. It’s so easy, you’ll kick yourself for not making your own all along, I know I am.
slow cooker cornbread casserole | a hearty, vegetarian slow-cooker meal topped with cornbread, what’s not to like?
slow-cooker red curry beef | This recipe is a simple, exotic and healthy meal. Especially when combined with cauliflower “rice”.
cauliflower rice | This rice alternative is great for those of us that think carbs are the devil. The delicious, delicious devil.
buffalo chicken french bread pizzas | I went from healthy to severely un-healthy here. This french bread pizza has such good flavor with the buffalo chicken and gorgonzola cheese. I ate this for a week straight.
horseradish roasted potatoes | A friend shared this recipe with me via instagram. I made it immediately and it will definitely be a go-to side item for my next dinner party.
red onion salad dressing | This salad dressing is so easy to whip up and has the best flavor, it will quickly become a “must have” in your refrigerator.
paleo slow-cooker chicken tortilla-less soup | I love this spicy, hearty soup. It’s healthy (until you add tortilla chips and cheese like me) and ridiculously easy. Try it this winter and see what you think.
chicken sausage, sweet onion & fennel pizza | This is a cooking light recipe that I tried on a whim. It’s very easy to throw together on a weeknight and I made some half-healthy pizza dough to make it even a little healthier. Half-healthy means I made the Pioneer Woman’s pizza dough, but substituted half the flour with whole wheat flour. I had never cooked with fennel before but I liked the sweet flavor it gave the pizza. And this pizza called for shredded gouda, which is just so yummy I can’t wait to have the leftovers for lunch today!
