A couple months ago, I shared a 5-ingredient Zuppa Toscana Olive Garden knock-off recipe. It was so good and quick, I recently made it again. I like using the spicy Italian sausage to give it even more flavor.
And in the SAME week I made this chicken gnocchi soup that is also an Olive Garden knock off. I’ve never had this soup at the restaurant, but this version was delicious! I made some slow-cooker chicken stock earlier in the week so I had cooked chicken and stock for the soup. It was easy and quick enough to do on a week night and the leftovers were just as good as day one.

And can I just recommend that if you’re not making your own gnocchi, you must try Della Terra Pasta‘s gnocchi (available at Whole Foods). A quote from their website just proves why the pasta is so so good:
“Della Terra means ‘of the earth’. Our artisanal pasta is made with organically grown durum wheat semolina and water. There are no preservatives or additives whatsoever. Our pasta is a true representation of simplicity and respect for the quality of the ingredient, and the way the flour was grown.”
